Beach dining back on the menu for Bunbury
Beach dining is back on the menu in Bunbury.
Vat 2 this week got the tick of approval from Bunbury City Council after applying for a seasonal licence over an area of Jetty Baths beach.
The licence means the waterfront restaurant will be able to serve diners on an area of the sand.
Owner Jenny Spencer said she hoped the community would embrace the concept.
“It will be great, we just hope Bunbury embraces it,” she said.
“This will be a bit different to what has happened in the past and we’re working to offer more out there.”
The restaurant is now working on liquor licensing for the area, but hopes to also have deck chairs and stand-up zones.
“We’re thinking casual Sunday sessions and stuff like that; obviously we’ve got residents around this area, so it would be something like just an acoustic guitar,” Ms Spencer said.
The licence will run over the summer months, from December to February, with beach dining to be on offer Thursday to Sunday.
Deputy Mayor Jaysen Miguel said the council’s approval of the concept would benefit not only Vat 2, but the wider community as well.
“It is fantastic to see businesses and groups thinking outside the box when it comes to diversifying or improving their business,” Cr Miguel said.
